Guyanese prawns fried "rice"

Cauliflower Fried rice with jerk prawns, I know Jerk isn't Guyanese but I was craving a lot of flavourful spicy food. Eating with PCOS means getting creative, rice is a staple, but all those carbs, you need to make adjustments to not have your carb count skyrocket.

Nutana's shrimp fried "rice"

Ingredients:

  1. 680g Tail on Shrimp

  2. 680g crumbled cauliflower

  3. 177g broccoli

  4. 73g grated carrot

  5. 117g yellow bell pepper

  6. 107g white onion

  7. 15g jalapeno

  8. 25g spring onion

  9. 7g garlic

  10. 4g ginger

  11. 1 tsp Himalayan pink salt

  12. 1 tbsp Fried rice seasoning

  13. 1tbsp jerk seasoning

  14. 2/3 cup chicken broth

Directions:

  1. Marinade shrimp with the jerk seasoning.

  2. Prep vegetables.

  3. Heat pan.

  4. Add Shrimp, let cook, once cooked, remove.

  5. Add ginger, garlic, and onions.

  6. Add 1/3 cup chicken broth.

  7. Add Broccoli, then 1/3 cup of chicken broth.

  8. Add cauliflower, fried rice seasoning, salt, and mix thoroughly in.

  9. Mix in carrots, bell peppers, jalapenos, spring onions and then shrimp.
