Mini Muffins!

I have a MAJOR sweet tooth, having to avoid a lot of store/ bakery bought baked treats, and being a food enthusiast, has led me to recipe development. With that being said, you can enjoy life, food should taste good and fuel you. Eating things you like, shouldn't make you feel guilty but eating with PCOS, often times leave you miserable if you eat certain carb-heavy food you'll be fatigued, etc. This is why I came up with my banana peanut butter chocolate chip mini muffins. Ingredients:

  1. 6 ripe bananas

  2. 193g peanut butter

  3. 3 tbsp honey

  4. 1/4 cup flax meal

  5. 1/4 cup almond flour

  6. 1/4 cup coconut flour

  7. 1.5 tsp baking powder

  8. 1 tbsp vanilla extract

  9. 1 tbsp chia seeds

  10. 1 tbsp psyllium husk

  11. 108 dark chocolate chips

Directions:

  1. Preheat oven to 350

  2. Mash bananas, then mix all dry ingredients

  3. Combine everything and mix thoroughly

  4. Pour into nonstick mini muffin tray

  5. Add 3 dark chocolate chips to each muffin

  6. Bake for 25 minutes.
